- •Chia Pudding:
- •1 cup milk of choice
- •1/2 cup pumpkin purée
- •1-2 Tbsp maple syrup, or to taste
- •1/2 tsp pumpkin pie spice
- •1/8 tsp salt

- •Pumpkin Mousse Topping:
- •4 oz Cool Whip
- •4 oz cream cheese (room temperature)
- •1/4 cup powdered sugar
- •8 oz pumpkin purée
- •1/2 tsp pumpkin pie spice
- •1/2 tsp cinnamon
Directions
- 1. For the chia pudding:
- 2. In a medium bowl, combine milk, pumpkin purée, pumpkin pie spice, salt, and maple syrup. Whisk until smooth and evenly combined.
- 3. Add the chia seeds and whisk again to incorporate.
- 4. Cover and refrigerate for at least 4 hours, or until set.
- 5. For the pumpkin mousse topping:
- 6. In a medium mixing bowl, beat the room-temperature cream cheese with an electric handheld mixer until smooth.
- 7. Add pumpkin purée, powdered sugar, pumpkin pie spice, and cinnamon. Beat on medium-low speed for 2–3 minutes, until well combined.
- 8. Gently fold in the Cool Whip in three parts, using a spatula. Fold until fully incorporated and no white streaks remain.
- 9. Cover and chill until ready to serve.
- 10. Assemble:
- 11. Divide the chia pudding between serving glasses.
- 12. Spoon or pipe pumpkin mousse on top.
- 13. Sprinkle with cinnamon sugar, if desired.
