  • Chia Pudding:
  • 1 cup milk of choice
  • 1/2 cup pumpkin purée
  • 1-2 Tbsp maple syrup, or to taste
  • 1/2 tsp pumpkin pie spice
  • 1/8 tsp salt
  • Pumpkin Mousse Topping:
  • 4 oz Cool Whip
  • 4 oz cream cheese (room temperature)
  • 1/4 cup powdered sugar
  • 8 oz pumpkin purée
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon

Directions

  1. 1. For the chia pudding:
  2. 2. In a medium bowl, combine milk, pumpkin purée, pumpkin pie spice, salt, and maple syrup. Whisk until smooth and evenly combined.
  3. 3. Add the chia seeds and whisk again to incorporate.
  4. 4. Cover and refrigerate for at least 4 hours, or until set.
  5. 5. For the pumpkin mousse topping:
  6. 6. In a medium mixing bowl, beat the room-temperature cream cheese with an electric handheld mixer until smooth.
  7. 7. Add pumpkin purée, powdered sugar, pumpkin pie spice, and cinnamon. Beat on medium-low speed for 2–3 minutes, until well combined.
  8. 8. Gently fold in the Cool Whip in three parts, using a spatula. Fold until fully incorporated and no white streaks remain.
  9. 9. Cover and chill until ready to serve.
  10. 10. Assemble:
  11. 11. Divide the chia pudding between serving glasses.
  12. 12. Spoon or pipe pumpkin mousse on top.
  13. 13. Sprinkle with cinnamon sugar, if desired.
