  • 10 Tbsp unsalted butter
  • 1 1/4 cups granulated sugar
  • 1/4 tsp kosher salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 2/3 cup chocolate chunks, optional

Directions

  1. 1. Preheat the oven to 325°F. Line the bottom and sides of an 8×8-inch square baking pan with parchment paper.
  2. 2. Prepare a double boiler by filling a medium saucepan with about 2 inches of water. Bring the water to a gentle simmer.
  3. 3. In a medium heat-safe bowl, combine the butter, sugar, and cacao powder. Place the bowl over the saucepan, ensuring the bottom of the bowl does not touch the water. Adjust the water level if needed.
  4. 4. Stir the mixture occasionally until the butter is fully melted and the mixture is warm. It may look gritty at this stage, but it is normal.
  5. 5. Remove the bowl from the heat and let it cool for about 5 minutes, or until warm to the touch.
  6. 6. Stir in the vanilla and salt. Add the eggs one at a time, mixing well after each addition, until the batter is thick and glossy.
  7. 7. Add the flour and stir until the batter is smooth and well combined.
  8. 8. Spread the batter evenly into the prepared pan and top with chocolate chunks.
  9. 9. Bake for 20 to 30 minutes, or until the edges look dry and the center appears just slightly underbaked. To check doneness, insert a toothpick into the center, and it should come out with a few moist crumbs attached.
  10. 10. Let the brownies cool completely in the pan. This step is important to help them set properly.
  11. 11. Once cooled, lift the brownies out using the parchment paper and cut into squares.
