  • Chia pudding:
  • 1/3 cup unsweetened plain plant-based yogurt
  • 3 Tbsp apple butter
  • 1 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup plant milk
  • Crumble:
  • 3 Tbsp gluten-free rolled oats
  • 3 Tbsp walnuts or pecans
  • 2 Tbsp maple syrup
  • Warm apples:
  • 1 apple, diced or thinly sliced
  • 2 tsp maple syrup
  • 1/4 tsp cinnamon
  • optional for serving: extra apple butter and maple syrup

Directions

  1. 1. Chia pudding:
  2. 2. In a bowl, combine the yogurt, apple butter, maple syrup, vanilla, cinnamon, salt, and milk. Stir until completely smooth.
  3. 3. Add the chia seeds and whisk well. Let the mixture sit for 5 minutes, then whisk again to break up any clumps.
  4. 4. Cover and refrigerate for at least 4 hours, or overnight, until thick and pudding-like.
  5. 5. Crumble:
  6. 6. In a mini food processor, add oats, walnuts, and maple syrup.
  7. 7. Pulse until the mixture reaches a crumbly consistency to your liking. Set aside.
  8. 8. Stewed apples:
  9. 9. Heat a sauté pan over medium-low heat.
  10. 10. Add the chopped apple, maple syrup, and cinnamon. Stir well to combine.
  11. 11. Cook for 3–4 minutes, stirring often, until the apples soften. Remove from heat and let cool slightly.
  12. 12. Assembly:
  13. 13. Divide the chia pudding between 2 jars.
  14. 14. Top each with the stewed apples.
  15. 15. Sprinkle generously with the crumble.
  16. 16. Optional: Finish with a spoonful of apple butter and a drizzle of maple syrup.
