- •4 ears of corn, shucked and silk removed

- •1 medium head romaine lettuce, chopped (about 8 cups)
- •2 avocados, sliced
- •1/4 cup pickled red onions
- •1/4 cup feta cheese, crumbled for topping
- •dressing ingredients:

- •4 oz feta cheese, crumbled (about half a cup)
- •1/3 cup buttermilk
- •1 Tbsp lemon juice
- •1 garlic clove, diced
- •1/4 cup sliced fresh chives
- •salt and pepper to taste
Instructions
- 1. Heat a grill or grill pan over medium-high heat.
- 2. Brush the corn with avocado oil and season with salt and pepper.
- 3. Place the corn on the grill and cook, turning occasionally, until lightly charred in spots, about 6–8 minutes. Remove from heat and set aside to cool slightly.
- 4. In a medium bowl, mash the feta with a whisk into a coarse paste.
- 5. Add the buttermilk, lemon juice, and garlic, and whisk until smooth. Stir in the chives, then season with salt and pepper to taste.
- 6. In a large bowl, toss the lettuce with half of the feta dressing and arrange on a serving platter or in individual bowls.
- 7. Cut the grilled corn kernels off the cob.
- 8. Top the lettuce with avocado slices, grilled corn, and pickled onions.
- 9. Drizzle with the remaining feta dressing and sprinkle with additional crumbled feta, if desired. Serve immediately.
