Grilled Corn Avacado Salad With Lemon Feta Dressing

Ingredients

  • 4 ears of corn, shucked and silk removed
  • 1 medium head romaine lettuce, chopped (about 8 cups)
  • 2 avocados, sliced
  • 1/4 cup pickled red onions
  • 1/4 cup feta cheese, crumbled for topping
  • dressing ingredients:
  • 4 oz feta cheese, crumbled (about half a cup)
  • 1/3 cup buttermilk
  • 1 Tbsp lemon juice
  • 1 garlic clove, diced
  • 1/4 cup sliced fresh chives
  • salt and pepper to taste

Instructions

  1. 1. Heat a grill or grill pan over medium-high heat.
  2. 2. Brush the corn with avocado oil and season with salt and pepper.
  3. 3. Place the corn on the grill and cook, turning occasionally, until lightly charred in spots, about 6–8 minutes. Remove from heat and set aside to cool slightly.
  4. 4. In a medium bowl, mash the feta with a whisk into a coarse paste.
  5. 5. Add the buttermilk, lemon juice, and garlic, and whisk until smooth. Stir in the chives, then season with salt and pepper to taste.
  6. 6. In a large bowl, toss the lettuce with half of the feta dressing and arrange on a serving platter or in individual bowls.
  7. 7. Cut the grilled corn kernels off the cob.
  8. 8. Top the lettuce with avocado slices, grilled corn, and pickled onions.
  9. 9. Drizzle with the remaining feta dressing and sprinkle with additional crumbled feta, if desired. Serve immediately.
